This is a 5 day course covering either a block or one day a week. The course culminates with the candidate undertaking two assignments, one of which is compulsory and the second free choice and a 2 1/2 hour written examination.

 

On successful completion of this course candidates, subject to appropriate training skills, will be able to register to deliver the new CIEH Level 2 Food Safety Awards for Catering, Manufacturing and Retail.

 

The programme covers the following topics:

  • Bacteriology

  • Food-borne illness
  • Physical contamination of food
  • Food storage, temperature control and preservation
  • Design and construction of food premises and equipment
  • Cleaning and disinfection
  • Pest control
  • Personal hygiene
  • Training strategies
  • Legislation
  • Management control techniques

The qualification is designed for managers and supervisors and senior hygiene personnel.

 

The cost of this course is £646.25 all inclusive.
