Outline

The CIEH Level 3 Award in Implementing Food Safety Management Procedures is designed for proprietors, managers and supervisors of small and medium sized catering businesses.  It is strongly recommended that candidates for this qualification have a good basic understanding of food safety that equates to a recent Foundation Certificate in Food Hygiene.

Successful completion of the course and assessment will enable candidates to understand:

  • The legal requirement for businesses to adopt a food safety management procedure based on the Codex HACCP principles.
  • The seven basic principles of the HACCP system and how these can be equated to a food safety management system in a catering enterprise.
  • The controls that need to be put in place to ensure the safety of food and how these should be monitored.
  • How a tool, such as Safer Food, Better Business, can assist small catering businesses to comply with the new legal requirement.

This is a one day course, 9:00am – 5:00pm concluding with an assignment based on a case study, to be completed in one hour under examination conditions.

The cost for the course including handbook, assessment, registration and certification is £95.00 (per candidate) plus VAT.  Discounts are available for group bookings.  Courses are held on a regular basis at our training centre and can be held on client’s own premises if required.
